Tasty Tuesday...on Wednesday


A little story: I had full intention of posting today about these biscuits sent from heaven (copy-cat red lobster biscuits, cause really they are perhaps the best things since, ever.) But then I started making them. And then I wondered if they would even work....

I had no butter. So I used a nasty bucket of spread that's been in the fridge for no-one-wants-to-know-how-long. And then I found I had no more milk. (It actually calls for buttermilk but whoever has that around?) But I do happen to have an abundance of water (don't you love the magic that is pipes and indoor plumbing?) and I had plain yogurt. So I threw in some water and added some yogurt cause I figured that's kind of like milk right? (Just go with it) And then I threw in some vinegar cause that'll make the milk sour, like buttermilk? Then I found I didn't have any sour cream, so I added more yogurt. I also had no green onions, so I added dried chives, parsley and oregano. Oh, and I used pepper jack cheese instead of cheddar.

And you know what?
They're still bomb.

Moral of story.
Follow the recipe. Or not.
They're great either way.

Here it is.

Copy Cat Red Lobster Biscuits
2 cups flour
1 tblsp sugar
1 tsp salt
1/4 tasp baking soda
3 tblsp chilled butter, cut in small pieces
3/4 cup shredded cheddar cheese
1/4 cup finely chopped green onions
1 cup buttermilk
1/2 cup sour cream

Preheat oven to 450 degrees. Lightly spoon flour into dry measuring cups. Mix all dry ingredients. Cut in butter. Add cheese and onions. Add buttermilk and sour cream till just sticky. Drop by 1/4 cup fills onto greased pan (I use coconut oil or butter). Brush with melter before and after cooking. Cook 15 minutes or until edges brown.

Eat to your heart's content.
