These things are amazing. Like as good as cheesecake awesome. And that's saying something since I love cheesecake so much. Mmmmm. And the best part is, they are easy peasy!
Here's whatchya need:
9 oz good quality white chocolate (or just white chocolote chips)
3 oz butter
2/3 cup sugar
2 large eggs, beaten
1 tsp vanilla
1 & 1/4 cup flour
1/2 tsp salt
1 cup raspberries (frozen or fresh)
Preheat oven 350 F. Grease pan (8x8 or 9x13, both work just depends on how think you want them)
Break up the white chocolate in a bowl. Put 6 oz into double boiler to melt. Cool slightly when melted. Whisk butter and sugar together until fluffy. Whisk in the eggs and vanilla. Sift the flour and salt over mixture, fold in. Add remaining broken white chocolate chunks. Fold in raspberries. Spoon the mixture into greased pan, and cook for 30 to 35 minutes.
I like to make them in the evening and let them sit over night, they tend to set really well that way. But I made them last night for dessert when the Mister and I had dinner at a friend's house, and I only let them sit for about 2 hours, and they were still fabulous!
